CROCKPOT BEEF ROAST - DINNER

Today I am going to share with y'all one of Matthew's favorite meals, crockpot roast beef!

It is probably one of the easiest meals I can make and my crockpot does all of it. I just fix a few sides to go with it and then it's time to eat! I also use crockpot bags so cleanup is REALLY easy. If you haven't discovered crockpot bags yet then get some the next time you go to the store and you can thank me later!

Ingredients:
- 2-2.5lb beef roast
- 1 package of brown gravy mix, dry
- 1 package of ranch dressing mix, dry
- 1 package of dried Italian salad dressing mix
- 1/2 cup water

Directions:
- Place roast in crockpot
- Pour each package over roast
- Pour water around roast
- Cook on low 8-9 hours

I made this soon after we got married and Matthew has requested it multiple times, so I always make sure to keep those three dry mixes in our pantry. The ranch and Italian dressing mix both come in boxes of 4, and the brown gravy comes in single packs at .50 each. Can't beat that!

I usually fix mashed potatoes, mac & cheese and green beans with this roast, and we always have leftovers for a couple of days- which makes for perfect lunches! Follow along on Snapchat (shelbycoats), I'm usually snapping away while I make dinner, and I love following other bloggers to get dinner ideas.

  9. Would I cook it for half the time if I cooked it on high?

    1. I had a 2.5 lb. chuck roast. I cooked it on high for 1.5 hours and turned it down to low for the remaining 4 hours and I still had a nice tender juicy roast. Husband love it - especially the gravy.

    2. What if my roast is 4lbs and I only have 6.5 hours?

  10. Does the roast need to be completely covered in water?

    1. No, the 1/2 cup has always worked perfectly for us. The roast will shrink a little as it cooks. If your roast was a little bigger then you might want to adjust your water. Hope this helps, enjoy!! :)

    1. We add carrots, potatoes, turnip and parsnip with more water and it’s awesome. The veggies pick up so much of the flavor.

    2. How much water did you add? And did you put the veggies around the roast or underneath it?

    1. I always use my pressure cooker for my pot roast. Brown roast first in your pressure cooker. Then add 1 packet brown gravy mix, 1 packet Ranch dressing, 1 packet Italian dressing, 1/2 cup red wine, 1/2 cup water or beef broth. Put lid on and pressure cook it for 55 min. Quick release then take out roast - put in potatoes, carrots and then put roast on top. Put lid back on and pressure cook for another 10 min. Quick release then take out everything and make gravy....DELISH!!!! and so easy.

  28. Made this last night and the family gobbled it up. I cooked on high for first hour like one commenter suggested and then low for 4 hours. I added veggies the last hour but it wasn't long enough. I would add them about half way through. The roast was delicious! Thanks for the recipe!

  31. Can I use beefy onion packet instead over gravy? Just realized I'm out if it?

  32. I've used both brown and mushroom gravy I think it's better with mushroom gravy and a tsp of liquid bullion

  33. I also use radishes in mine. They are great.

  34. you don't list the sodium amount. With those three packets, I'd assume you are
    over dosing on sodium......

  35. I have always put the dry ingredients into the water land mix it really well and pour it over the roast, gets in all the nooks and crannies!

  36. This has become my go to pot roast. Super flavorful!

  38. I made this today and it is delicious. I added extra water because I put a lot of carrots and potatoes in it.

  39. Boggles my mind why anyone would post on anything but this particular recipe, made as instructed. If you make yours different then post your own recipe. Also, sodium content is listed on each packet.
